Analı –Kızlı (Traditional Soup)
1,5 kg of fine cracked wheat
1,5 kg of minced meat
1 glass of boiled chickpea
2 spoons of tomato paste
2 spoons of vegetable oil
Enough amount of salt, chili,
dried mint and powdered black pepper.
Flour, egg, salt and chili is
added into fine cracked wheat and the mixture is kneaded by the aid of water.
Onions are chopped up and then mixed with minced meat and fried in vegetable
oil. Tomato and parsley is added into the fried minced meat and then the fried
minced meat is left for cooling. Small round pieces are broken off the
previously kneaded cracked wheat and the pieces are carved. The minced meat is
put into the carved pieces and meatballs having a size of a big walnut is made.
A portion of the cracked wheat is made hollow small round pieces. The prepared
meatballs are boiled in hot water. Boiled chickpea is added into the water. Hot
vegetable oil and tomato paste are poured into the water and the soup is boiled
until the ingredients in water are cooked. After the soup is cooked, it is
served by squeezing lemon into the soup plates.
